This simple, high-grown Chiapas is transformed into a rich, chocolatey dark roast. Due to the elevation and quality of this bean, it is brought to a smoky dark roast without the threat of ashy flavors. The coffee is grown by a collection of smallholders in the Jaltenango and Villa Corzo regions of Chiapas, Mexico, near the border with Guatemala.
